壳聚糖复合涂膜处理对采后杏鲍菇贮藏品质影响

研究不同浓度配比的壳聚糖复合涂膜液涂膜处理,对采后杏鲍菇贮藏品质的影响.通过对杏鲍菇的腐败时间、失重率、呼吸强度、多酚氧化酶活性(PPO)这四种指标进行测定,结果表明:壳聚糖浓度为2.0 g/L、乙酸浓度为1.5%、乳酸链球菌素浓度为0.4 g/kg时,可有效地延长杏鲍菇的货架期7天.该法不仅表现出比较明显的抑制腐败的效果,还使杏鲍菇出现延迟褐变和减缓水分蒸发的现象.
Effects of Chitosan and Nisin Coating on Post-harvest Storage Quality of Pleurotus Eryngii
Storage quality of Pleurotus Eryngii was influenced by composite chitosan coating fluid in different concentration.With the time of decomposition,weight loss ratio,respiration rate and polyphenol oxidase as indexes,the results indicated that when the concentration of chitosan was 2.0 g/L,the concentration of ethanol was 1.5 % and the concentration of nisin was 0.4 g/kg,shelf-life of Pleurotus Eryngii could be extended for 7days.By his method,Pleurotus Eryngii spoilage was inhibited,its browning was delayed and evaporation was slowed down.
