By consulting literatures, the paper synthetically gives the review on the nutrients,healthy efficien-cy, and the related processes research about pigment extraction and health product were summarized, looking forward to the utilization prospect in the food of Gynura bicolor, in order to further study the health value and provides the basis for development of related products of Gynura bicolor.
