Inhibition of non-enzymatic glycosylation by exopolysaccharides of Bifidobacterium longum
The extracellular polysaccharide extract(ZJ1-EPS)of Bifidobacterium longum ZJ1 strain isolated from the feces of centenar-ians was used to explore the effect and mechanism of ZJ1-EPS inhibition of AGEs by pyruvaldehyde(MGO)-induced bovine serum al-bumin(BSA)and non-enzymatic glycosylation(AGEs)in human skin cells and glucose-induced zebrafish AGEs,respectively.The re-sults showed that ZJ1-EPS had a significant inhibitory effect on the formation of products in the middle and late stages of protein non-enzymatic glycosylation.This study revealed that the exopolysaccharide extract of Bifidobacterium has the effect of inhibiting the pro-duction of AGEs,suggesting its mechanism of action and application potential for skin anti-aging.
