Anthocyanin is a kind of flavonoid polyphenols with high biological activities , and it is wide-ly distributed in plants flowers ,fruits, stems, leaves and seeds of the water-soluble natural pigments in nature . In recent years , many researchers have done a lot of in-depth studies on anthocyanin .This paper summarizes the physiological role of anthocyanins research , and strive to provide information for the development and fur-ther study the biological activity of anthocyanins .
