新疆不同地区和品种小麦储存品质和风险因子分析研究

小麦品质与小麦品种和影响小麦品质的风险因子密切相关.从新疆5个不同地区扦取10个不同品种的100份小麦样品,对新疆不同品种小麦常规质量指标、储存品质指标、农药残留及重金属含量等进行测定,确定不同品种小麦品质指标,并分析影响不同小麦品质的风险因子.结果表明,小麦中黑胚粒检出率为31%;总砷、镉、铬检出率较高,但数值都在安全标准范围内;58项农药残留均未检出,表明农药残留风险较低;脱氧雪腐镰刀菌烯醇、黄曲霉毒素B1和玉米赤霉烯酮等真菌毒素均未检出.在小麦生长、储存和加工过程中需采取严格的质量控制措施,在小麦出入库过程中需开展质量安全检验监测,同时,监管部门需持续加强监测和管理,确保小麦的质量安全.
Analysis on storage quality and risk factors of wheat from different regions and varieties in Xinjiang
Wheat quality is closely related to wheat varieties and risk factors affecting wheat quality.Through taking 100 wheat samples of 10 different varieties in 5 different regions of Xinjiang,the conventional quality indexes,storage quality indexes,pesticide residues and heavy metal contents of different varieties of wheat in Xinjiang were determined to determine the quality indexes of different varieties of wheat and analyze the risk factors affecting the quality of different wheat.The results showed that the detection rate of black embryo grain in wheat was 31%;the detection rates of total arsenic,cadmium and chromium were higher,but the values were within the safety standard range;58 pesticide residues were not detected,indicating that the risk of pesticide residues was low;deoxynivalenol,aflatoxin B1 and zearalenone were not detected.Strict quality control measures should be taken in the process of wheat growth,storage and processing,and quality and safety inspection and monitoring should be carried out in the process of wheat storage and transportation.At the same time,regulatory authorities should continue to strengthen monitoring and management to ensure the quality and safety of wheat.
