Study on the formula ratio,enhancing immune and antioxidant effect of a sour jujube and acerola cherry compound juice beverage
Orthogonal test and stabilizer optimization test were used to determine the formula proportion and stabilizer dosage of complex fruit juice beverage.The oxidative damage model and immune hypothermia model of mice were established,and the immune enhancement and antioxidant effects of complex fruit juice drinks were investigated through experiments.The orthogonal test results showed that the optimal formula of the complex juice beverage was as follows:jujube juice concentrate 10%,coniferous cherry juice concentrate 2.4%,crystalline fructose 5%,sucralose 0.006%,the stabilizer dosage was carboxymethyl cellulose sodium 0.225%and xanthan gum 0.075%.The animal test results showed that each dose group could significantly increase the difference of ear swelling.Medium and high doses can significantly regulate the changes of organ index caused by cyclophosphamide,and alleviate the effects of drug modeling on the immune ability of mice.The content of MDA and H2O2 can be significantly decreased at medium and high doses,and the effect of alcohol modeling on oxidative damage of mice can be reduced.Through research,the compound fruit juice beverage with rich flavor and pleasant appearance was obtained.It was also verified that it had enhanced immunity and antioxidant effects on mice.
