The study of preparation technology by Cordyceps militaris prebiotic drink
The preparation process of Cordyceps militaris prebiotic drink was studied by exploring the extraction conditions,enzymatic hydrolysis conditions and taste preparationwith cordyceps and daylily as raw materials.The results showed that the best extraction process of daylily is:3 times extraction,the ratio of material to water was 1∶15,1∶10 and 1∶10,respectively,and the extraction times were 2 h.Under these conditions,the soluble solid contents of the extract were 2.86%,the soluble protein content was 2.8%,and the total sugar content was 7.2 mg/100 mL.The optimal enzymolysis conditions of Cordyceps militaris solution were as following:the activity ratio of papanase and alkaline protease was 1∶1,enzyme dosage was 6 000 U/mL,the enzymolysis temperature was 40 ℃,and the enzymolysis time was 5 h.The optimal prebiotics were fructooligosaccharides 12.5 g/10 mL,galactooligosaccharides 10.5 g/10mL,and xylooligosaccharides 7.5 g/10 mL.At this time,the beverage flavor was unique and the taste was suitable.Also,the overall sensory score of the beverage was 82.3.
