Analysis of the pollution of poultry eggs、poultry and animal meat in Hunan and Yunnan regions
Salmonella contamination in poultry eggs and meat samples from Hunan and Yunnan were investigated and analyzed.The selected samples were first cultured by bacteria enhancement and selective plate isolation,then identified by biochemical identification,automatic microbial identification instrument,fluorescence quantitative PCR identification,serotyping identification,matrix assisted laser resolution ionization time-of-flight mass spectrometry identification.The results showed that the contamination rates of Salmonella enteritidis and Salmonella typhimurium in 101 batches of eggs and meat samples were 35.64%and 8.91%,respectively.The proportion of eggs contaminated by Salmonella enteritidis was 25.00%,and the proportion contaminated by Salmonella typhimurium was 33.33%.The proportion of meat contaminated with Salmonella enteritidis was 37.08%and that with Salmonella typhimurium was 5.62%.The contamination rate of poultry eggs with Salmonella enteritidis and Salmonella typhimurium was 58.33%,which was higher than that of poultry meat with 42.70%.The investigation results show that the situation of salmonella contamination in poultry eggs and poultry meat is not optimistic,and it still needs attention in the process of slaughter,production and processing,packaging,storage and transportation,and consumption.
