Analysis of Quality and Safety Indicators of Current National Standards for Edible Vegetable Oil in China
China is a major consumer of edible vegetable oil.Aiming at to meet the needs of market consump-tion and standardize the production of enterprise products,China has formulated a total of 21 common national standards for edible vegetable oil to regulate the quality requirements of edible vegetable oil products so far.The focus is on analyzing 20 edible vegetable oil standards from three aspects:the basic composition and main physi-cal parameters,quality indicators,and food safety indicators.We further summarizing various quality and safety indicators,intuitively reflecting the commonalities and differences of edible vegetable oil indicators for different types,grades,and processing techniques.On the one hand,it helps grain and oil inspection personnel to quickly obtain information on edible vegetable oil inspection projects,and on the other hand,it provides data basis for the formulation of standards for other oil products.At the same time,constructive suggestions were put forward for the establishment of a complete set of specialized standard samples for oil color and flavor,continuous revision of edible vegetable oil standards,and the application of information technology.
