The characteristics of food include chemical,physical and biological properties of food,The charac-teristics of grain affect grain storage,Grain storage is an important part of food security.This paper summarizes the change rule and trend of grain characteristics in grain storage,and the impact of these changes on food quali-ty and safe storage.It aims to provide reference and basis for ensuring China's food security storage.
