摘要

杂粮营养成分丰富并含有多种生物活性物质,但因难糊化制约了其产业发展.通过对杂粮热加工工艺处理制成罐头食品,并用于奶茶行业和预制菜行业,是实现杂粮资源高效利用途径之一.以年产 6 000t杂粮罐头为生产目标,进行了厂址选择及产品方案确定、生产工艺、物料衡算、设备选型、车间布局设计、劳动力定员及水电汽估算等环节的车间设计,为推动杂粮加工产业发展提供了一定借鉴.

Abstract

Coarse grains are rich in nutrients and contain various bioactive substances,but its industrial devel-opment is constrainted due to their difficulty in gelatinization.One of the ways to achieve efficient utilization of coarse grains resources is to process them into canned food by use the thermal processing technology,which can be used in the milk tea industry and prefabricated vegetable industry.This article which takes the annual produc-tion of 6 000 t of coarse grains can as the production target,mainly focus on factory site selection and product scheme determination,production process,material balance,equipment selection,workshop layout,labor require-ment,water,electricity and steam estimation,etc.,and providing a certain reference for promoting the develop-ment of the coarse cereals processing industry.
