再生稻低温储藏条件下品质变化研究

为探究再生稻低温储藏条件下品质变化,以再生稻二茬昌两优 8 号和优质稻谷黄华占为实验原料,在低温条件下储藏 300 d,监测分析储藏期内再生稻水分含量、出糙率、整精米率、脂肪酸值、发芽率和降落数值的变化.结果表明:低温储藏 300 d内再生稻品质处于宜存范围,储藏期间再生稻水分含量处于安全水分且变化较为恒定;出糙率、整精米率、发芽率呈下降趋势,与优质稻谷变化趋势一致;脂肪酸值和降落数值呈上升趋势.与优质稻谷相比,再生稻整精米率明显较低,脂肪酸值上升速率相对更快,降落数值上升速率相对更慢.
Study on Quality Changes of Ratooning Rice under Low Temperature Storage Conditions
In order to investigate the quality changes of ratooning rice under low temperature storage conditions,the second crop of ratooning rice,Chang Liangyou No.8,and high quality rice,Huang Huazhan,were used as ex-perimental raw materials,and stored under low temperature conditions for 300 days.The changes in moisture content,roughness,polished rice rate,fatty acid value,germination rate,and landing value of ratooning rice were monitored and analysed during the storage period.The results showed that:the quality of ratooning rice was in the range of suitable storage within 300 days of low-temperature storage.The moisture content of ratooning rice was in the safe moisture during the storage period and the changes were relatively constant.The husked rice yield,head rice yield and germination rate showed a decreasing trend,which was consistent with the trend of high-quality rice grains.The fatty acid value and falling number showed an increasing trend.Compared with high-quality rice,the head rice yield of ratooning rice was obviously lower,the fatty acid value rose relatively faster,and the falling number relatively slower.
