胶原蛋白肽-焦磷酸铁复合物的构建及其补铁效果评价

铁复合物是一种将铁元素与食品大分子结构进行组装的新型铁强化剂,具有化学稳定性和生物利用度高的优点。本课题采用均质、超声和透析处理,在焦磷酸铁(FP)的合成过程中,引入胶原蛋白肽(CPs)。红外光谱测定发现,该方法成功制得CPs-FP复合物。与FP相比,CPs-FP的胃肠释放率提高。缺铁性贫血大鼠实验表明,CPs-FP能够有效改善大鼠体重、血红蛋白含量、组织铁含量和其他指数,呈现浓度依赖效应。同等剂量下,CPs-FP复合物具有更高的生物利用度。
Construction of collagen peptides-ferric pyrophosphate complex and its iron supplementation effect
Iron-loaded complex is a new type of iron fortifying agent that assembles iron ele-ment with food macromolecular.It has the advantages of chemical stability and high bioavail-ability.Through homogenization,ultrasound and dialysis treatment,collagen peptide(CPs)was introduced into the synthesis process of ferric pyrophosphate(FP).The result of FTIR showed that the CPs-FP complex was successfully prepared by this method.The gastrointes-tinal release rate of CPs-FP was higher than that of FP.In the experiment of iron deficiency anemia rats,CPs-FP can effectively improve the body weight,hemoglobin content,tissue iron content and other indexes,showing a concentration-dependent effect.At the same dose,CPs-FP complex exhibited higher bioavailability.
