Analysis the Volatile Components of Walnut Male Flower (Juglans sigillata) Based on HS-SPME-GC-MS
The types and relative content of aroma components of the walnut (Juglans sigillata) male flowers were detected and analyzed to explore the fragrant composition and aroma characteristics of walnut male flowers. Walnut male flower of Guizhou region was used as the research object. We applied head space solid phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC-MS) to analyze and identify volatile substances. 22 volatile components were identified from walnut male flowers,among which two compounds of juglone and dimethyl sulfide accounted for 62.18%±2.93% of the total content,and alcohols and olefin accounted for 19.03%±1.91% and 10.32%±1.84% of total content respectively,while the contents of aldehydes,ketones and esters were low. The aroma of walnut male flowers is mainly contributed by linalool,trans-pinocarveol,2-methyl-propanal,2-methyl butanal,3-methyl butanal,nonanal,palmitic acid ethyl ester and olefin compounds. Principal component analysis classified 22 volatile compounds into the 2 categories. The aroma volatiles of walnut male flowers in Guizhou region was mainly composed of alcohols,aldehydes and alkenes. The most abundant olefin compounds species contributed to the prominent fruit odor.
