多糖/蛋白颗粒基Pickering乳液性能调控及应用研究进展

Pickering乳液因具有良好的稳定性和无毒副作用等优点,基于食品生物大分子颗粒稳定剂,制备Pickering乳液有良好的发展前景.首先,总结了多糖、蛋白质、颗粒稳定剂浓度、油含量及环境条件等因素对Pickering乳液性能的调控;其次,简要介绍了Pickering乳液在包埋、增溶和提高环境敏感型物质生物利用率等方面的应用;最后,展望了Pickering乳液未来的研究方向和应用领域.
Research Progress of Regulation and Application of Pickering Emulsion Stabilized by Polysaccharide/Protein Particles
Pickering emulsions have become a hot spot of concern because of their good stability and non-toxic side effects,etc.The use of food biopolymers as emulsifiers for the preparation of pickering emulsions has good prospects for development.The regulation of pickering emulsion performance by multiple factors were summarized,including polysaccharide,protein,particle concentration,oil content and environmental conditions.The application of pickering emulsion in embedding,solubilization and improving the bioavailability of environmentally sensitive substances was briefly introduced.Finally,the future research direction and application fields of pickering lotion were prospected.
