Fractionation of Yanbian yellow cattle tallow and analysis of physicochemical indexes
Yanbian yellow cattle tallow has a high content of unsaturated fatty acids and is not easy to oxidize,but with the passage of time,its quality will be affected to different degrees.The surfactant fractionation method was utilized to fractionate Yanbian yellow cattle tallow(crude oil),and the optimal fractionation conditions were obtained by single factor experiment,and the oxidation of liquid oil,solid tallow and crude oil were accelerated for a period of 20 days.The results showed that under the conditions of 2%surfactant concentration,4%electrolyte concentration,42 ℃ crystallization temperature and 4 h crystallization time,the liquid Yanbian cattle tallow(referred to as liquid oil),solid Yanbian cattletallow(referred to as solid fat)were obtained.The acid value,anisidine value,peroxide value,water content,2-thiobarbituric acid,melting point and iodine value of liquid oil during the accelerated oxidation process were significantly better than those of solid fat and crude oil(P<0.05),and the influence of liquid oil was significantly lower than that of solid fat and crude oil(P<0.05).To sum up,this experiment verified that the comprehensive quality evaluation of liquid Yanbian yellow cattle tallow was better,which provided a certain theoretical reference for the utilization of Yanbian yellow cattle tallow and the follow-up related research.
