Analysis on food-borne Salmonella contamination and drug resistance in Tai'an city from 2021 to 2023
Objective To understand the contamination status, serotype distribution, and drug resistance of Salmonella in food sold in Tai'an city,Shandong province from 2021 to 2023,so as to provide reference for the prevention, disease treat-ment,and food safety supervision and management of Salmonella infection. Methods From March to November each year in 2021 to 2023,random sampling, stratified sampling, and fixed-point sampling methods were used to collect 270 samples of raw meat and its products, ready to eat animal aquatic products, food sold at mobile stalls, and takeaway meals from agricultural markets, supermarkets, retail stores, online shopping, and other locations, and Salmonella was isolated,i-dentified,and serotyped. The drug sensitivity test was performed according to broth dilution recommended by the Clinical and Laboratory Standards Institute(CLSI).Results A total of 43 strains of Salmonella were detected in 270 samples, with a total detection rate of 15.93%(43/270).Among them, the detection rate of raw meat and its products was the highest,at 32.00%(32/100).Fifteen serotypes were identified, among which Salmonella typhimurium(25.58%,11/43)and Salmonella enteritidis(18.60%,8/43)were the 2 most predominant serotypes. The resistance rate of 43 Salmonella strains to ampicillin was the highest,at 53.49%(23/43),followed by tetracycline(51.16%,22/43)and chloramphenicol(37.21%,16/43).Conclusion Salmonella contamination was found in four types of food sold in Tai'an city,Shandong province from 2021 to 2023,with a polymorphic distribution of Salmonella serotypes and severe resistance to some antibi-otics.
