Analysis on the Nutrient Component of 2 Fargesia Species Bamboo Shoot
In this paper, Fargesia bamboo shoots were used as materials in this research.The nutrition constitu-ents of bamboo shoots from Fargesia pagyrifera and F.edulis were determined by different methods. The results showed that the moisture content of F.pagyrifera shoots and F.edulis shoots is 92.6%and 89.8%, respectively. The contents of crude fiber and crude fat of F.edulis shoots are higher than that of F.Pagyrifera shoots.The protein and total sugar contents in F.pagyrifera shoots are higher than that in F.edulis shoots.Both species are rich in in-organic elements, which constitute 13.51 %in F.pagyrifera shoots and 13.73 %in F.edulis shoots, respective-ly.The former was slightly lower than that of the latter.The tannin content in F.pagyrifera shoots is 0.36 mg/g, which was far lower than that the 1.40 mg/g in F.edulis shoots.The taste and the flavor of F.pagyrifera shoots is better than that of F.edulis shoots, due to the discrepancy of the contents of moisture, crude fiber, total sugar and tannin.The results will provide theoretical basis for the exploitation and utilization of bamboo shoots.
