低氘水生物技术对咖啡碱和茶多酚浸出率的作用

为探讨低氘水含量对茶叶中咖啡碱和茶多酚浸出率的作用,以南岳云雾茶夏秋红茶为例,开展低氘水生物技术以及沸水浴浸提实验、微观结构测试和表征分析.结果显示:(1)4 种含氘水的红外光谱图几乎重叠,在波长为 1500~3400 cm-1 区间具有明显的特征峰.(2)对比蒸馏水组,低氘水组的南岳云雾茶夏秋红茶的茶汤颜色均有所增加;50 mg/kg低氘水组茶叶表面出现明显的裂痕和塌陷,而其他组没有显著的区别;与蒸馏水组相比,4 个采集点不同低氘水组咖啡碱的浸出率均更高.(3)对比刚开始浸泡时间,4 组咖啡碱的浸出率均有所提高,且在 5、10、15 s不同低氘水组咖啡碱的浸出率均更高.研究表明不同含量的低氘水均有利于南岳云雾茶夏秋红茶中咖啡碱和茶多酚的溶出.
Low Deuterium Water Biotechnology and Its Effect on the Leaching Rate of Caffeine and Tea Polyphenols
To explore the effect of low deuterium water content on the extraction rate of caffeine and tea polyphe-nols in tea,taking Nanyue Yunwu tea and summer and autumn black tea as an example,low deuterium water bio-technology and boiling water bath extraction experiments,microstructure testing and characterization analysis were carried out.The results show that:(1)The infrared spectra of four types of deuterium containing water almost over-lap,with obvious characteristic peaks in the wavelength range of 1500-3400 cm-1;(2)Compared to the distilled water group,the low deuterium water group showed an increase in the color of the tea soup of Nanyue Yunwu tea,summer and autumn black tea.Compared to the distilled water group,the tea surface of the 50 mg·kg-1low deuteri-um water group showed obvious cracks and collapses,while there was no significant difference in the other groups.Compared with the distilled water group,the extraction rate of caffeine in the low deuterated water group at four dif-ferent collection points was higher;(3)Compared to the initial soaking time,the leaching rates of caffeine in all four groups were improved,and the leaching rates of caffeine in different low deuterated water groups were higher at 5 s,10 s and 15 s.Different levels of low deuterium water are beneficial for the dissolution of caffeine and tea polyphe-nols in Nanyue Yunwu tea,summer and autumn black tea.
