Research on the Processing Technology of Characteristic Fermented Traditional Chinese Medicine Bamboo Juice Medicated Leaven
Objective:Recovering the fermentation process of Bamboo Juice Medicated Leaven based on ancient litera-ture and optimizing its modern fermentation process parameters.Methods:The study investigated the optimal fermen-tation temperature,humidity,and time for Bamboo Juice Medicated Leaven using a one-way test.The comprehensive weighted scoring method was then used to screen for the best process parameters based on daily appearance traits and enzyme vigor as evaluation indexes.Results:The flour is mixed dry,and the amount of water added is controlled at 20-30 g.The optimal fermentation conditions are a temperature of 40℃ and a humidity of 90％.The fermentation process should last for ten days.Conclusion:The modern fermentation process parameters have been screened and found to be feasible.The process is stable and reproducible,which is consistent with ancient records.It can serve as a reference for Bamboo Juice Medicated Leaven subsequent in-depth research.
