A study on the erception of food culture authenticity on the food street and its influence
Taking Hubuxiang in Wuhan as a case study,through questionnaire survey and statistical analysis,structural equation model method was used to explore the authenticity of multi-dietary culture and the experi-ence of food culture in the food street.The results show that:(1)Compared with non-local food,recreation-ists have stronger perception of the authenticity of local food,higher satisfaction,and are more likely to revisit or recommend local food;(2)The perception of food authenticity is the most important factor affecting food satisfaction.The perception of local food authenticity can positively and significantly affect the local food be-havioral intention of recreationists,but the perception of non-local food authenticity has no effect on behavioral intention;(3)The authenticity perception of environment and service can directly affect the food satisfaction of recreationists,but not affect the behavioral intention;he impact of environmental authenticity perception on local food satisfaction is stronger than that of non-local food;(4)Food satisfaction positively and significantly affects the behavioral intention of recreationists,and the impact of local food satisfaction on behavioral inten-tion is stronger than that of non-local food.
