Comparison of Slaughtering Performance and Meat Quality in Tianhua Mutton Sheep and Gansu Alpine Fine Wool Sheep
To explore the differences in meat performance between Tianhua mutton sheep and Gansu alpine fine wool sheep,six 6-month-old ewes from each of the two breeds under natural grazing conditions were selected for slaughter,then the slaughter performance,meat quality,and muscle fiber characteristics were measured.The results showed as fol-lows:①The pre slaughter live weight,kidney weight,and eye muscle area of Tianhua mutton sheep were significantly higher than those of Gansu alpine fine wool sheep(P<0.05).②The L*,a*and b*values of meat color indexes were all significantly higher in Tianhua mutton sheep than in Gansu alpine fine wool sheep(P<0.05),and the fat content of Tian-hua mutton sheep was significantly lower than in Gansu alpine fine wool sheep(P<0.05).③The diameter and area of muscle fibers of Tianhua mutton sheep were significantly lower than those of Gansu alpine fine wool sheep(P<0.05).④Both species of sheep showed a significant positive correlation between pre slaughter live weight and eye muscle area,carcass weight,and kidney weight(P<0.05);spleen weight was positively correlated with liver weight and kidney weight(P<0.05);there was a significant positive correlation between pH45min and redness(P<0.05);there was a signifi-cant negative correlation between muscle fiber diameter and live weight before slaughte(P<0.05).In summary,com-pared with Gansu alpine fine wool sheep,the meat performance of Tianhua mutton sheep has been greatly improved,and it has good promotion and utilization value.
