老鹰茶具有特征性的樟香和良好的保健功效,在重庆、贵州等地盛行.目前对老鹰茶的研究尚处于起步阶段,主要集中在化学成分和生物活性方面,缺乏对加工工艺、特征化学物质、感官性状和功效之间相关性的系统概述.老鹰茶在长期储藏过程中的品质变化和老化机理也缺乏深入的探究.文章系统综述了老鹰茶的制备工艺、生物活性物质、健康功效和老化特性,深入探讨了目前研究的不足和面临的挑战,并提出了可能的研究方向和前景,以期为老鹰茶产业发展提供启示.
Abstract
Hawk tea,known for its distinctive camphor aroma and health benefits,is popular in regions such as Chongqing and Guizhou.However,current research on hawk tea is still in its early stages,primarily focusing on its chemical compositions and biological activity.A comprehensive review of the correlations between processing methods,characteristic chemical compounds,sensory properties,and health effects is lacking.There is also limited research on the changes in quality and aging mechanism during long-term storage.This paper systematically reviews the preparation process,bioactive compounds,aging characteristics and health benefits of hawk tea,discusses the current research gaps and challenges,and proposes potential research directions and future prospects to provide insights for the development of the hawk tea industry.
