Survey on the contamination of Salmonella and diarrheagenic Escherichia coli in cooked meat products in Yunnan Province
Objective To understand and analyze the contamination status and drug resistance of Salmonella and di-arrheagenic Escherichia coli(E.coli)in cooked meat products in Yunnan Province,and to analyze the drug resis-tance genes and virulence genes.Methods In 2022,296 pieces of cooked meat products in different categories and different operating segments in Yunnan were collected,Salmonella and diarrheagenic E.coli were detected according to the national food safety standards.The drug sensitivity test was performed on the isolated bacteria according to the micro-broth dilution method in CLSI.The gene sequences obtained were analyzed with drug resistance gene database ResFinder4.1 and virulence gene database VFDB.Results The positive rates of Salmonella and diarrheagenic E.coli were 3.72%(11/296),4.73%(14/296)among 296 cooked meat products collected in Yunnan during 2022.Salmonella was highly resistant to tetracycline,ampicillin and minocycline,diarrheagenic E.coli was highly resistant to nalidixic acid,tetracycline and cefazolin.All Salmonella strains carried aac(6')-Iaa resistant gene,and 3 strains of di-arrheagenic E.coli did not carry any of the resistant gene.One strain of Salmonella carried virulence genes which inclued spvB,cdtB,pltA and pltB.One strain of diarrheagenic E.coli carried virulence genes which inclued spvB,cdtB,pltA,and pltB.Conclusion There was a greater contamination of pathogenic bacteria in cooked meat products in Yunnan.The drug resistance of Salmonella and diarrheagenic E.coli were serious.It was should strengthen the supervision.
