Effects of Chicken Breeds and Feeding Age on Taste Characteristics of Chicken Soup
In order to study the effect of breed and raising age the flavor traits of high quality local chicken soup,the breed and age of chicken which was more suitable for stewing soup were selected.In this experiment,artificial sensory evaluation,electronic tongue and flavor substance content determination were used to compare the difference of chicken broth flavor between Daninghe chicken(DN)and Qingjiao ma chicken(QM)at different feeding time(120 days and 150 days),and found out the reason that breed and feeding age affect the taste of chicken soup.The results showed that both breed and feeding age could affect the flavor traits of high quality local chicken soup.The chicken soup of the same age chicken was better than that of Daning River Chicken.The 150-day-old Daninghe Chicken had better taste than the 120-day-old chicken,and the 120-day-old chicken had better taste than the 150-day-old chicken.Breed had significant influence on astringent,astringent-after and umami taste of chicken soup(P<0.05),and feeding age had significant influence on bitter-after taste of chicken soup(P<0.05).Most of the freeamino acid and nucleotide contents had positive effects on the artificial sensory evaluation.The results indicated that the variety and feeding age affected the total flavor of chicken soup by affecting the content and proportion of free amino acids and nucleotides in chicken soup.
