鸡蛋微量元素组成特征及其应用研究进展

鸡蛋中富含多种微量元素,是人类获取必需微量元素的重要来源.同时,鸡蛋中对人体有害的非必需微量元素含量很低,是不可多得的高安全性营养食品.鸡蛋中微量元素含量受多种因素影响,具有一定的特异性.通过多元素分析可得到具有特征性的元素指纹图谱,在地理信息溯源和分类等方面有着重要应用.文章在介绍鸡蛋微量元素组成特征的基础上,深入分析鸡蛋微量元素含量差异的影响因素(蛋鸡品种、外界环境条件和饲粮),并用于鸡蛋的地理信息溯源和分类研究,以期为鸡蛋的营养健康、食品安全、溯源分类等研究提供理论支撑和方法参考.
Research Process on Composition Characteristics and Application of Trace Elements in Eggs
Eggs are rich in a variety of trace elements and are an important source of essential trace elements for human be-ings.Meanwhile,eggs contain very low level of harmful non-essential trace elements,making them a rare and highly safe nutri-tional food.The level of trace elements in eggs was influenced by various factors and has certain specificity.The characteristic ele-ment fingerprint can be obtained by multi-element analysis,which has important applications in geographical location tracing and classification.This review introduced the composition characteristics of trace elements in eggs,the influencing factors(layer breed,external environmental conditions and feed)of the differences in trace element content in eggs were discussed,which was applied to the geographical information traceability and classification research of eggs.The paper could provide theoretical sup-port and methodological reference for the nutritional health,food safety,traceability and classification of eggs.
