限制基础日粮比例补饲水培大麦苗对籽鹅肉品质及肌肉氨基酸组成的影响

试验旨在探究限制不同比例基础日粮补饲水培大麦苗对籽鹅肉品质及肌肉氨基酸组成的影响.试验选取28日龄籽鹅(公母各半)160只,随机分为4组,每组4个重复,每个重复10只鹅.对照组籽鹅饲喂基础日粮,85%限饲组、72.5%限饲组和60%限饲组籽鹅分别以85%、72.5%和60%的比例饲喂基础日粮,自由采食水培大麦苗.试验期42 d.结果显示:①72.5%限饲组和60%限饲组籽鹅肌肉24 h滴水损失率显著低于对照组(P<0.05).②各组常规营养成分含量均无显著差异(P>0.05).③72.5%限饲组和60%限饲组籽鹅腿肌甘氨酸含量、胸肌和腿肌脯氨酸含量均显著高于对照组和85%限饲组,胸肌组氨酸含量显著低于对照组和85%限饲组(P<0.05).胸肌中,60%限饲组的非必需氨基酸(NEAA)含量,72.5%限饲组和60%限饲组的鲜味氨基酸(DAA)含量均显著高于对照组和85%限饲组(P<0.05).腿肌中,72.5%限饲组的氨基酸总量(TAA)含量显著高于其余3组,72.5%限饲组和60%限饲组的NEAA含量显著高于对照组、必需氨基酸(EAA)/TAA比值和EAA/NEAA比值显著低于对照组(P<0.05).研究表明,限制基础日粮比例在72.5%时补饲水培大麦苗既能增强籽鹅肌肉保水性,又能提高籽鹅肌肉鲜味氨基酸含量,改善肉质口感风味,但基础日粮比例低于72.5%时可能降低肌肉必需氨基酸占比.
Effects of Restricted Basal Diet Supplemented with Hydroponic Barley Seedling on Meat Quality and Muscle Amino Acid Composition of Zi Goose
This experiment was conducted to explore the effects of restricted basal diet supplemented with hydroponic barley seedling on meat quality and muscle amino acid composition of Zi goose.A total of 160 Zi geese(half male and half female)at 28 days of age were randomly divided into 4 groups with 4 replicates in each group and 10 geese per replicate.Geese in the control group were fed basal diet.Geese in 85%,72.5%and 60%restriction groups were fed basal diet at proportions of 85%,72.5%and 60%,with free access to hydroponic barley seedlings.The experiment lasted for 42 days.The results showed as follows:① 72.5%and 60%restriction groups had significantly lower muscle 24 h drip loss rate than that in the control group(P<0.05).② There was no significant difference in muscle basal nutritional composition among 4 groups(P>0.05).③ In 72.5%and 60%restriction groups,leg muscle glycocoll content and breast and leg muscles proline content were significantly higher than those in the control group and 85%restriction group,breast muscle histidine content was significantly lower than those in the control group and 85%restriction group(P<0.05).In breast muscle,nonessential amino acids(NEAA)content in 60%restriction group and delicious amino acids(DAA)content in 72.5%and 60%restriction groups were significantly higher than those in the control group and 85%restriction group(P<0.05).In leg muscle,total amino acids(TAA)content in 72.5%restriction group was significantly higher than those in other groups.NEAA content in 72.5%and 60%restriction groups were significantly higher than that in the control group,while essential amino acids(EAA)/TAA rate and EAA/NEAA rate of them were significantly lower than that in the control group(P<0.05).It was concluded that feeding 72.5%basal diet with free access to hydroponic barley seedlings could enhance the water holding ability and raise the delicious amino acids content of Zi goose muscle,thereby improving its meat taste and flavor.However,when the proportion of basal diet less than 72.5%,the essential amino acids proportion of muscle might be reduced.
