A Brief History of Classification,Cultivation and Utilization of Garlic and Allium Macrostemon in China
Garlic and Allium macrostemon have a long history of cultivation and utilization in China.Traditionally,they were generally divided into hu and suan,which correspond to today's garlic and Allium macrostemon.The cultivation of them was mainly focused on garlic,and its planting technology system was initially formed during the Northern and Southern Dynasties,becoming increasingly refined thereafter.By the Ming Dynasty,garlic cultivation techniques had been fully established and continued until the founding of New China.During the traditional era,the habit of eating garlic was relatively common among various groups.Beyond its culinary use,the public also applied it to fields such as biological control and veterinary medicine.
