对1年生罗汉果块根的营养成分的分析，结果表明，罗汉果块根的灰分含量为2．30％，可溶性糖含量为45.94％，蛋白质含量在6．51％，粗纤维含量为26．63％，脂肪含量为3．47％，VC含量为3．54 mg／100g ，有机酸含量1．89％。在所测的7种矿质元素中，以Ca的含量（853．793μ g ／g ）最高，M g的含量（544．2μ g ／g ）次之，Cu的含量（5．43μ g ／g ）最低。罗汉果块根所含营养成分丰富，具有综合开发前景。
Analysis of Nutrient Components in Tuber of Siraitia grosvenorii
The nutrition components in annual tuber of Siraitia grosvenorii were analyzed .The results showed that the content of ash was 2 .30% ,the content of soluble sugar was 45 .94% ,and that of protein was 6 .51% .The con‐tent of crude fiber ,fat ,vitamin C and organic acid was 26 .63% ,3 .47% ,3 .54 mg/100g and 1 .89% ,respectively . As 7 mineral elements were concerned ,Ca had the highest content of 853 .793μg/g ,Mg took the second of 544 .2μg/g ,and Cu had the least content of 5 .43μg/g .The tuber of Siraitia grosvenorii is rich in nutrient compo‐nents ,which has great potential for exploitation .
