Optimizing Analysis Method for Determination of Phytosterols in Edible Oils
A method for determination of phytosterols in edible oils was optimized and evaluated. After comparing the method with high performance liquid chromatography and thin layer chromatography, the method we developed was found to be more sensitive,rapid and accurate with good reproducibility. Using this method the phytosterol contents in different refining processes were traced, and the loss of phytosterols in refining was accurately measured.Furthermore,the content and constitution of phytosterols in many kinds of crude vegetable oils and in deodorization distillates were determined with this method.
