Trans Fatty Acid Content of Food in the Chinese Market
The aim of this study is to provide reliable and comparable data on trans fatty acid (TFA) content of foods in China.A TFA market survey was performed on bottled cooking oil,catering cooking oil and some popular oil -bearing food.Samples were collected from market followed by TFA measurement and data analysis.581 bottled cooking oil samples from 133 brands were examined.These samples covered 15 oil varieties including blended oil,soybean oil,corn oil,sunflower oil,rapeseed oil,olive oil,peanut oil,sesame oil and camellia oil,etc.The results showed that TFA content of 87.29% samples are no more than 2%.74 samples from 5 different categories of catering oil were collected and studied.It was found that the mass fraction of TFA was 0.45% and 1.68%,showing that TFA content of these 5 categories of catering oil was kept at a quite low level.Furthermore,TFA contents in some popular oil-bearing food were also investigated.TFA content in 257 samples was studied including cake,bread,cookie,chips,ice cream,chocolate,popcorn,instant noodles,non-dairy cream and whip topping,etc.9 categories and 76 leading brands were involved.The TFA contents in these foods had decreased dramatically compared to the published data in 2005~2010.The TFA mass fraction of the two food categories(cake,bread & pie and cookies)exceeds 1% (oil base),while others contain lower TFA mass fraction.Thus intensive studies are required to identify why TFA contents fluctuate greatly among various food categories.
