Gas chromatography-mass spectrometry(GC-MS)technology was used to conduct metabolomic studies on rice samples from the Chahayang Geographical Indication Rice Reserve and Chahayang rice samples stored one year later to explore the effects of storage on rice metabolites.In this experiment,principal component a-nalysis and orthogonal partial least squares-discriminant analysis multivariate statistical analysis,hierarchical clus-ter analysis and other methods were used to analyze the data.The results indicated that 147 and 148 metabolites were identified in 2021 and stored samples respectively.There was little difference in quantity,but there were differences in the types of metabolites.A total of 39 differential metabolites were screened.Hierarchical cluster analysis found that the content of rice metabolites before and after storage showed a reverse trend.Metabolic pathway analysis screened a total of 8 metabolic pathways with the highest correlation with metabolite differences,they can be used as reference materials in studying the effects of storage on rice metabolic transmission.
