玉兰叶多酚物质提取及特性研究

利用超声波提取法,以乙醇为溶剂对玉兰叶多酚进行提取.选择乙醇体积分数、料液比、超声温度和超声时间作为影响因素.在单因素实验的基础上,通过正交实验对玉兰多酚的提取条件进行优化,经紫外光照、添加剂、氧化剂、还原剂、金属离子和热处理后,研究了玉兰叶多酚的抗氧化稳定性.同时研究玉兰叶多酚对油脂基质的抗氧化性质.结果表明:以乙醇为提取溶剂时,玉兰多酚的最佳提取工艺为乙醇体积分数为80%,料液比1∶16,超声温度80℃,超声时间40 min.玉兰叶多酚对自由基清除作用试验表明,多酚对DPPH自由基和羟自由基均具有清除作用,对DPPH自由基清除能力较好.多酚提取物可以有效地延缓植物油及动物油的氧化,抗氧化能力随着玉兰叶多酚提取物添加量的增加而增强.
Extraction and Characteristics of Magnolia Polyphenols
The extraction of polyphenols from Magnolia grandiflora was conducted by ultrasonic extraction with ethanol as solvent.The ethanol concentration,solid-liquid ratio,ultrasonic temperature and ultrasonic time were se-lected as influencing factors.On the basis of single factor experiment,the extraction conditions of polyphenol were studied by orthogonal test.The antioxidant stability of polyphenols was studied by UV irradiation,additives,oxi-dants,reducing agents,metal ions and heat treatment.At the same time,the antioxidant properties of polyphenols from leaves of Magnolia on oil matrix were studied.The results indicated that the optimum extraction conditions were as follows:ethanol concentration of 80%,material ratio of 1:16,ultrasonic temperature of 80℃,ultrasonic time of 40 min.The results indicated that polyphenol had a scavenging effect on DPPH free radical and hydroxyl radical and had better scavenging ability on DPPH free radicals.The results indicated that the polyphenols from leaves of Magno-lia could effectively delay the oxidation of vegetable oil and animal oil,and the antioxidant capacity increased with the increase of polyphenols from leaves of Magnolia.
