摘要
以大豆毛油为研究对象,研究其在不同气体(Ar、N2、CO2)、不同体积分数(95%、98%)气调储藏过程中主要品质变化规律,构建预测模型并进行预测和验证,为毛油安全储藏及品质预测提供参考.结果表明,储藏期间N2、Ar、CO2气调油脂POV分别比CK显著降低了 72.7%~91.5%、74.2%~92.2%和75.7%~89.9%,气调处理抑制POV效果显著,且Ar效果最好,其次为N2和CO2;Ar和N2气调抑制AV效果显著,CO2处理则具有显著促进作用.3种气体体积分数98%气调储藏大豆毛油POV和AV不同程度低于体积分数95%.基于POV,运用一级氧化动力学模型结合Arrhenius方程建立储藏期预测模型,拟合精度高(R2>0.95),验证效果好,预测储藏期相对误差为8.3%.结合实测和预测模型预测结果得出,25、40、50、60℃情况下,CK组储藏期分别为 69、38、26、19 d,Ar98%和 N2 98%组储藏期分别为 155、104、83、66 d 和 129、92、76、63 d,Ar气调处理对维持大豆毛油储藏品质效果好于N2气调,但差异不显著,且体积分数越高,效果越好.
Abstract
Soybean crude oil was taken as the experimental material,the main quality changes of soybean crude oil during the process of controlled atmosphere storage with different gases(Ar,N2,CO2)and different volume frac-tions(95%,98%)were studied,the prediction model was constructed and verified,providing reference for the safe storage and quality prediction of soybean crude oil.The results indicated that the peroxide value(POV)of oils trea-ted with N2,Ar and CO2 gas conditioning significantly reduced by 72.7%-91.5%,74.2%-92.2%and 75.7%-89.9%than CK during storage,respectively.The effect of gas conditioning treatment on inhibiting POV was sig-nificant,and Ar had the best effect,followed by N2 and CO2.Ar and N2 gas conditioning treatment significantly in-hibited AV,while CO2 treatment significantly promoted AV.The POV and AV of three gas regulation soybean crude oil with the volume fraction of 98%were lower than that of 95%in varying degrees.Based on the POV,the first-order oxidation kinetics model combined with the Arrhenius equation was used to establish the storage period predic-tion model.The fitting accuracy was high(R2>0.95),the verification effect was good,and the relative error of storage period prediction was 8.3%.Combined with the results of the measured and the predicted with model,at 25,40,50 and 60℃,the storage periods of CK group were 69,38,26,19 days,respectively,and the storage periods of Ar 98%and N2 98%group were 155,104,83,66 days and 129,92,76,63 days,respectively.Ar gas condi-tioning is better than N2 for maintaining soybean crude oil storage quality,but the difference is not significant,and the higher the volume fraction,the better the effect.
