摘要
脂质作为稻米中的第三大物质组分,对稻米品质具有显著影响,其含量受到环境和遗传因素共同调控.文章综述了稻米脂质的组成以及含量特征,分析了脂质影响稻米品质的作用机理以及影响稻米脂质含量的遗传和环境等因素,并展望了未来研究方向,以期为优质水稻品种选育和稻米食味品质改良提供参考.
Abstract
As the third component of rice,lipid has a significant effect on rice quality,and its content is regula-ted by both environmental and genetic factors.In this paper,the composition and content characteristics of rice lipids were reviewed,the mechanism of lipid effect on rice quality and the genetic and environmental factors influencing lip-id content were analyzed,and the future research direction was prospected,in order to provide reference for the breeding of high-quality rice varieties and the improvement of rice taste quality.
