宁春4号小麦品质及相关性分析

以2016年至2022年间,宁夏银川市、石嘴山市、吴忠市和中卫市的144个宁春4号小麦样品为研究对象,对其质量和品质开展调查,并采用多重线性回归分析对参数间的相互关系进行分析。结果表明:宁夏地区种植的宁春4号小麦平均品质主要表现为中筋品质,中强筋比例低,可满足面条和硬式馒头小麦品质要求;同时,在宁夏不同年份间和不同区域种植的宁春4号,质量等级和品质特性存在差异。分别构建稳定时间、能量和吸水量与品质指标之间的相关性预测模型,研究结果表明:粗蛋白质含量、湿面筋含量、面筋指数和能量与面团稳定时间显著正相关,相关系数依次为0。373、0。315、0。347和0。746;粗蛋白质含量、最大拉伸阻力和延伸性与能量显著正相关,相关系数依次为0。129、0。987和0。229;湿面筋含量和沉淀值与吸水量显著正相关,相关系数依次为0。727和0。524。
Quality and Correlation Analysis of Ningchun No.4 Wheat
The quality characteristics of 144 Ningchun No.4 wheat samples collected from four cities of Ningxia in the range of 2016 to 2022 were analyzed.The correlation between the quality parameters were studied to discover the determinants of the quality.The results indicated that the quality of Ningchun No.4 wheat was mainly manifested as medium gluten quality,and the proportion of medium-strong gluten was low,meeting the requirements for noo-dles and hard steamed bread wheat.The wheat had different quality grades and quality characteristics in different years and regions as well.The prediction models of stability,energy and water absorption were constructed,and the results indicated that wet gluten,extensibility,gluten index and crude protein content were positively correlated with the stability,and the correlation coefficients were 0.373,0.315,0.347 and 0.746,respectively.Crude protein content,maximum resistance and extensibility were positively correlated with the energy,and the correlation coeffi-cients were 0.129,0.987 and 0.229.Gluten index and sedimentation index were positively correlated with the water absorption,and the correlation coefficients were 0.727 and 0.524.
