Changes of Volatile Components During the Contamination of Four Molds in Rice Were Analyzed Based on SPME-GC-MS
The volatile substances in the rice samples inoculated with four different molds were analyzed compo-sitionally to find out the variation patterns and characteristic volatile substances.Firstly,four molds(Aspergillus glaucus 3.0100,Aspergillus glaucus 3.3975,Fusarium oxysporum PM and Fusarium oxysporum PP)were prepared into two concentrations of suspensions and then inoculated on rice samples at 28 ℃ and stored in a constant tempera-ture incubator at 80%relative humidity for 56 days.Solid-phase microextraction with gas chromatography-mass spectrometry(SPME-GC-MS)was used to detect the rice samples every 7 days to obtain qualitative and quantita-tive data and analyze.The volatile substances produced by rice samples inoculated with different molds during storage were mainly alkanes,alkenes,alcohols,ketones,aldehydes,acids,esters,aromatic compounds and other types of substances,and after different days of storage,the types and contents of volatile substances produced varied greatly,from which the characteristic volatile substances of four molds and the change rules of substances at different stages of contamination were identified.It was preliminarily shown that the feasibility of judging the type and growth state of contaminated mold by detecting volatile substances in rice was preliminarily displayed.
