摘要

为了探究红木籽油的活性因子的稳定性以及体外抗氧化活性,研究利用超声波乳化法处理红木籽油,获得精细乳液,将其冷冻为粉末,以延长红木籽油活性因子的保持时间和稳定性.采取DPPH自由基清除法、ABTS阳离子自由基清除法和超氧阴离子自由基清除法3种抗氧化性能研究方法,系统探究了红木籽油的抗氧化性能.研究结果表明,利用超声波乳化法处理过后的红木籽油,香叶醇质量分数从原本的20%提高到80%,提高了红木籽油的抗氧化活性,有效延长了其活性因子的保持时间和稳定性.当红木籽油质量浓度为50 mg/mL时,对DPPH自由基的清除率达到98.85%,并且红木籽油质量浓度仅为5 mg/mL时对DPPH的清除能力达到了43.77%.当红木籽油质量浓度仅为7 mg/mL时,对ABTS+自由基的清除率达到85.06%,当红木籽油质量浓度为4 mg/mL时,对ABTS+自由基的清除率也可达到39.98%.当红木籽油质量浓度仅为0.45 mg/mL时,对超氧阴离子自由基的清除率达到85.71%,表明红木籽油具有强的体外抗氧化性能.

Abstract

In order to investigate the stability and antioxidant activity of annatto seed oil in vitro,ultrasonic emul-sification was used to treat annatto seed oil,obtain fine emulsion,and freeze it into powder to prolong the retention time and stability of annatto seed oil active factor.The antioxidant properties of annatto seed oil were evaluated by three methods,including DPPH radical scavenging,ABTS cationic radical scavenging and superoxide anion radical scavenging.The results indicated that the content of geranyl in the oil was increased from 20%to 80%,the antioxi-dant activity of the oil was improved,and the retention time and stability of its active factor was prolonged effectively.When the concentration of annatto seed oil was 50 mg/mL,the scavenging rate of DPPH free radicals could reach 98.85%.And when the concentration of annatto seed oil was only 5 mg/mL,the scavenging ability of DPPH could reach 43.77%.When the concentration of annatto seed oil was only 7 mg/mL,the scavenging rate of ABTS+free radicals could reach 85.06%,and when the concentration of annatto seed oil was 4 mg/mL,the scavenging rate of ABTS+free radicals could also reach 39.98%.When the concentration of annatto seed oil was only 0.45 mg/mL,the scavenging rate of superoxide anion free radical could reach 85.71%,indicating that annatto seed oil had strong antioxidant properties in vitro.
