摘要

橄榄多酚为高品质橄榄油中代表性次生代谢产物,是开发药物、功能食品及日化等领域产品的优质原料.当前,关于植物多酚的研究愈发被人们重视,围绕多酚的生物活性一直是多方的研究热点,国内外对橄榄多酚的分离提取、成分鉴定及生物活性等方面开展了大量研究.为更好地赋能我国橄榄资源产业化发展,进一步推动橄榄产业高值化利用与高质量发展,文章旨在对橄榄多酚的成分鉴定以及多种生物活性研究进展进行总结,为深入研究其功效及开发相关产品提供参考.

Abstract

Olive polyphenols are representative secondary metabolites in high-quality olive oil.They are excel-lent raw materials for the development of pharmaceuticals,functional foods,and daily chemical products.Conse-quently,they serve as high-quality raw materials for the development of drugs,functional foods,and cosmetics.Currently,research on plant polyphenols,especially olive polyphenols,is receiving increasing attention.The investi-gation of polyphenol bioactivities has been a significant research focus encompassing the separation,extraction,iden-tification of components,and assessment of biological activities of olive polyphenols both domestically and internation-ally.In this article,the purpose was to provide a comprehensive summary of the research progress regarding the com-ponent identification and multiple biological activities,with the objective of contributing to a deeper understanding of their efficacy and the development of related products in support of the industrial utilization and high-quality ad-vancement of olive resources in the food industry.
