Abstract
This paper focuses on the application technology of artichoke extract in the production of goat and sheep milk cheese,including the curd characteristics of artichoke extract,simple extraction method of crude enzyme,application types and varieties,main technology and control points,etc.,to provide technical reference for guiding the development of new goat and sheep milk cheese.
