Lipopolysaccharide(LPS)is an important component of the outer membrane of Gram negative bacteria.During cell division,detachment of outer membrane vesicles,or bacterial cell death,LPS is released into the surrounding medium,also known as endotoxin.This article comprehensively expounds the sources and related influencing factors of LPS in milk,in order to provide a theoretical reference for subsequent research and prevention and control of LPS in milk.
