Advances Studies on Extraction and Purification of Purple Sweet Potato Anthocyanins
Purple sweet potato(PSP) anthocyanins has strong antioxidant activity and many other advantages such as, safe, non-toxic, anti-mutation, protect the liver, and the prevention of cardiovascular disease and other health effects, and is a natural food coloring, can be used in many industries. This paper summarized the domestic and foreign PSP anthocyanin extraction and purification technology, and the main research progress of Anthocyanin extraction and purification technology from PSP, This paper also analysis of the main flow of PSP Anthocyanin extraction and purification, and the food safety of the use of PSP anthocyanin. This paper proposed to carry out the research topics about the extraction and purification technology of PSP anthocyanin, and prospected the development and utilization of PSP anthocyanin.
