Evaluation of Amino Acid Metabolites of Coconut Water of'Wenye No.5'at Different Developmental Stages
Coconut water is rich in essential and non-essential amino acids.In this study,'Wenye No.5'coconut water at different development stages was selected as the research object,and local coconut water was selected as the control.The metabolomics of liquid chromatography tandem mass spectrometry was combined to screen the differential metabolites of amino acid content in coconut water.The results showed that the contents of essential amino acids(lysine,valine,histidine and threonine)and non-essential amino acids(arginine,glutamine,serine and aspartic acid)of'wenye No.5'were higher than those of local coconut at each development stage.There was significant positive correlation between L-leucine and phenylalanine,phenylalanine and isoleucine,serine and glutamic acid,tyrosine and glutamine.The results of this study were of a great significance for the breeding and precise identification of fruit-type coconuts in the future.
