Analysis on Quality Characteristics of Pu'er Coffee
Pu'er coffee is a national geographic indication protection product.In order to study Pu'er coffee quality characteristics,the coffee samples within the protection range of geographical indication products were collected and detected the contents and cupping scores.The quality characteristics of Pu'er coffee were analyzed,and compared with other coffees from Yunnan and foreign coffees.The results showed that there were significant differences in water content,ash content,crude fiber and water extract of Pu'er coffee from different producing areas(P<0.05).Compared with other coffees from Yunnan and foreign coffees,Pu'er coffee had higher contents of protein,but lower contents of ash,total acid and crude fiber.The cupping scores of 71%Pu'er coffee met the requirements of specialty coffee standards,and six kinds of Pu'er coffee samples were grouped with the world-famous specialty coffee.The results showed that Pu'er coffee which was planted in a small area could be comparable to the world-famous boutique coffee.
