摘要
面对日益增长的乳品品质需求,A2奶作为一种有效提高人体消化能力,易于营养物质吸收的高品质乳品,因其营养特点成为近年来的研究热点,同时也推动了乳蛋白成分之一的A2型β-酪蛋白成为研究热点之一.研究发现,A2奶的β-酪蛋白更接近于母乳蛋白质,可以满足糖尿病患者和乳糖不耐受人群对乳品营养的需求.本文介绍了 A2奶的优点和发展现状、A1和A2型β-酪蛋白的检测方法、A2奶与人体健康的关系、并且总结了 A2型上游奶源的筛选培养等.
Abstract
In the face of increasing demand for dairy quality,A2 milk,as a high-quality dairy product that effectively improves human digestive a-bility and is easy to absorb nutrients,has become a research hotspot in recent years because of its nutritional characteristics,and has also pushed one of the components of dairy proteins,A2-type β-casein,to become one of the hotspots for research.It has been found that the β-caseins of A2 milk is closer to breast milk protein,which can meet the needs of diabetics and lactose intolerant people for dairy nutrition.This paper reviews the advantages and development of A2 milk,introduces the detection methods of A1 and A2 β-caseins,discusses the relationship between A2 milk and human health,and summarizes the screening and cultivation of A2 upstream milk sources.
