Probiotics Bifidobacterium.animalis.subsp.Lactis.MN-Gup,which was isolated from the intestinal flora of long-lived elderly people in Bama,China,was investigated for its fermentation characteristics in yogurt and physicochemical properties during storage.The regulation effect of MN-Gup probiotic yogurt on blood glucose was also explored using the type 2 diabetic rat model.The results showed that MN-Gup probiotic yogurt could maintain an acceptable number of viable lactic acid bacteria(>108 CFU/g)and favorable physicochemical indicators during the stor-age period(28 days)at 4 ℃.Compared with conventional yogurt,the probiotic yogurt had better sensory evaluation preference,indicating that Bifidobacterium lactis MN-Gup had good fermentation performance and could endow yogurt with good characteristic flavor.Subsequently,the in vivo test results confirmed that MN-Gup probiotic yogurt could significantly reduce fasting blood glucose levels,improve insulin resistance,and modu-late serum lipid profiles in HFD/STZ-treated rats,which had the potential to alleviate the clinical symptoms of type 2 diabetes.
