With the passage of probiotics,the acid production capacity,bile salt resistance,acid resistance and antioxidant capacity of the strain change.Freeze-drying is a common preservation method for probiotics,which has a great impact on the transcription and can temporarily change the characteristics of the strain.In this study,Lactobacillus plantarum M547,M621,M748 and Lactobacillus pentosus M750 were used to explore the effect of freeze-drying on the stability of the strains in passage.The results showed that freeze drying affected the stability of bile salt tolerance,but had no obvious effect on acid production capacity,acid resistance and antioxidant capacity.
