Analysis of the content and influencing factors of furosine and lactulose in infant formula milk powder
Detect the mass fraction of furfuran and the concentration of lactulose in commercial infant formula milk powder,and analyze the factors af-fecting the mass fraction of furfuran and the concentration of lactulose.The results showed that the mass fraction of furfuran was 124.4-1 210.3 mg/100 g protein,and the mass concentration of lactulose was 17.9-769.1 mg/L.There was no statistically significant difference(P>0.05)in the origin and main raw material types on the furfuran and lactulose,and production conditions and storage conditions would have an impact.Furfuran can also be used as an indicator of the degree of lysine damage in dairy products.The proportion of blocked lysine in commercial infant formula milk powder was 2.7%-20.5%of the total lysine,and the average mass fraction of available lysine was 7.5 g/100 g protein,slightly higher than the average level of breast milk(6.6 g/100 g protein).This study aims to control the quality of infant formula by monitoring biomarkers,which can provide reference for the development of relevant standard systems for fresh infant formula.
