Application of Bacillus bacteriocin in food preservation
Bacillus is a widely distributed dominant genus in nature with strong survival and environmental adaptability.Bacillus bacteriocin is a multifunctional protein substance produced by its ribosomes.It has a wide range of antibacterial effects and has good antibacterial effects on fungi and bacteria.Compared with other non-spore strains,it has more development value.In this paper,the classification,characteristics,antibacterial mechanism and application of Bacillus bacteriocins in food preservation were reviewed,in order to provide reference for further research and devel-opment of Bacillus bacteriocins.
