Determination of fat in infant formula for special medical purposes by improved alkaline hydrolysis
The optimal water bath heating time,mixed ether usage and extraction frequency were selected to improve alkaline hydrolysis in the GB 5009.6-2016"National food safety standard:determination of fat in foods".The applicability of improved alkaline hydrolysis for the determi-nation of fat in infant formula for special medical purposes was evaluated using quality control,actual samples,spiked recovery and precision tests.The theoretical value of fat content in quality control samples was 22.0 g/100 g,and the measured value was 21.9 g/100 g.The measured result was within the allowable error range indicating its reliability.Spiked recoveries for infant formula for special medical purposes and quality control samples were 95.9%-98.6%with relative standard deviation(RSD)of 1.10%-1.16%,indicating high accuracy and precision of the method.When the method was applied to 23 batches of commercial samples,the measured values of fat content met the requirements of the national standard.Ac-cordingly,improved alkaline hydrolysis can be used to detect fat in infant formula for special medical purposes.
